This week I am getting back into the swing of things with my menu plan. I had more of “loose” plan last week because I had a lot going on and I needed only easy “I know for a fact my kids will eat” recipes. So, as you can imagine there were lots of tacos, quesadillas, and homemade pizza on the menu.
My menu this week features some tried and tested recipes along with a few new ones. If all goes well with the new recipes I will post them over the next couple weeks. I am really excited to share the blueberry lemon steel cut oats. I have made them a couple times now and they are delicious. Think the blueberry lemon muffins I made a couple years ago but now in a hot bowl of oatmeal. Yum!
I spent a few hours prepping the menu yesterday. If you follow me on facebook then you saw all the pictures as I put the recipes together. I was able to get the breakfast sandwiches, oatmeal, mason jar salads, stuffed pepper filling, enchilada filling, and mb patties made. Everything right now is in the refrigerator except for the breakfast sandwich filling, that is in the freezer. Here are some of the pics.

I ran out of time to get the sesame chicken prepared. Most likely, I will prep that recipe tonight or tomorrow. That recipe is a little tricky for me to make during the week because it only needs about 4-5 hours to cook in the slow cooker so I can’t make it when I am at work or it will be a dried out mess when I get home. So I am thinking I will make it when I get home tonight then store in the fridge for us to eat sometime this week.
