For some reason, every year around this time I always start to feel completely burnt out. I have a ton of work to do but don’t feel like doing any of it. Can you relate? Obviously, as a busy working mom, I don’t really have the choice to put my feet up and ignore my responsibilities nor do I want to. Lots of people depend on me and if I crawl into a hole I am certain the man (or woman) hunt would start not to long after. Instead, of stressing out about everything I take some time to look at my duties (that sounds so formal) and decide what can be adjusted. This way I change what I can and prevent my mind from going to total mush.
Obviously, the one area of my life that I have control over, in order to make my life easier, is my menu plan. Therefore, this week’s menu plan is going to be an easy one with minimal cooking. Do you like the sound of that? I know I do! So, this week we will be having lots of freezer meals, salads, sandwiches, and super simple pizzas.
Also, I will be using up lots of little leftovers and tidbits hanging around in my refrigerator and freezer. For example, I have about 4 ounce of goat cheese that needs to be used up among other random ingredients. This will be a full blown freezer and pantry recipe week! The only ingredients that I will need to purchase will be stuff for my Mason Jar Salads along with fruits and vegetables.
Here is my menu.
Breakfast
Steel cut oats
Eggs and toast

- I made about 21 burritos last weekend so I still have a bunch in the freezer.
- Steel cut oats I made yesterday and stored them in the refrigerator.
Lunch
Mason jar salads
Greek yogurt and fruit

- The mason jar salads will be put together tonight. I would have put them together yesterday but I ran out of time. By the way I absolutely love these Mason Jar Salads. I will be writing up my experience and thoughts on these soon.
Snacks
Cheese and whole grain cracker
Raw almonds

- Cheese was cut up last week.
Dinner
Cajun pasta chicken
Black bean chili over rice
Chicken BLT wraps
Naan pizza with tomato and goat cheese

- I know you have seen Cajun chicken pasta on my menu a few times over the last month but that is because I was testing different recipes. I made this again yesterday and I finally found a recipe I like. I will post it shortly. Anyway, the Cajun chicken is stored in the refrigerator.
- Chunky beef chili, black bean chili, and tacos were made last week and stored in the freezer.
- I will use an organic rotisserie chicken from the store for wraps. Bacon will be made night of.
