Menu Plan {January 14th – 20th} plus Make Ahead Tips

Ahhh it feels so good to finally sit down and write my menu plan for the week. It was not my plan to freezer cook today but for some reason I still spent most of my day in the kitchen. If I was not in the kitchen then I was doing laundry. The point being I don’t think I sat down once in the last 12 hours.

I did take a break to go for a walk outside with my girls. It was 60 degrees today and in Buffalo NY went it hits about 40 in January it is against the law to not go outside. Actually, it is quite funny to see the way buffalonians (that is what we call ourselves) react when the weather gets warm (yes 40 is warm). You see everyone outside, many in shorts, and a few die hards with flip flops. You see motorcycles out and and even some convertibles. It is awesome and one of the many reasons I love the b-lo (another way us buffalonians say buffalo).

Because I am exhausted this menu plan post is going to be short, sweet, and to the point. I did not go grocery shopping this week so will be using up the food in the freezer and pantry.  A few meals from last week – quinoa salad and steak house pizza – will move onto this week. I did not have time to make the salad and Matt was anti pizza last week – apparently, they served it up too many times at work.

Here is my menu plan

Breakfast

Breakfast sandwiches

Slow cooker steel cut oats

Pancakes

Make ahead tips

  • I have 8 sandwiches left from last weekend’s freezer cooking session.
  • Steel cut oats will be made overnight Monday or Tuesday night.
  • We will have a breakfast for dinner Wednesday night so I can stock up on pancakes.

Lunch

Cajun chicken pasta

Quiona salad with roasted garlic, arugula, and tomatoes

Pb & J’s

Leftovers

Yogurt, fruit, and homemade granola

Make ahead tips

  • I made cajun chicken pasta over the weekend and put together some individual freezer meals with the leftovers. I plan to post the recipe this week.
  • I made a loaf of buttermilk wheat bread today for PB & J’s (using my bread machine). Don’t think I am an overachiever I just did not feel like going to grocery store or wasting $4 on a loaf of bread.
  • I made the granola tonight. My house smells awesome!

Dinner

Tacos

Chicken quesadillas

Steak house pizza or salad depending on hubs mood.

Sausage, tomatoes, and arugula

Spaghetti and Meatballs

Leftovers or easy pantry meal

Make ahead tips

  • Taco beef was made last weekend and in the freezer.
  • Chicken for quesadillas was made today.
  • Pizza dough will be tomorrow.
  • Sauce and meatballs was made a few weeks ago and in the freezer.

  1. Your menu looks *so* good. I love Cajun Chicken Pasta- do you have a recipe you prefer to use? Also- I’d be curious about the bread machine recipe, it sounds good. My homemade bread always ends up yielding very thick slices. Do you eat sandwiches with thick bread? Or do you have a trick to slicing it thinly? Have a blessed week of cooking!
