Ready or not this week is Christmas. I really love this time of year. My mom turns her house into a winter wonderland then we bake cookies, sit around and chat, and just be lazy. It is awesome! Even though it can get quite stressful with all the shopping and festivities I try to stay focused on the things that really matter – family.
Last week there was a little glitch in our usually holiday routine because we all got sick with a pretty nasty virus. Thankfully, everyone is better now so we can get back to enjoying the holidays.
With a week to go until New Year’s I am sure some of you are starting to thinking about your resolutions. Let’s get to my menu plan.
I think it is especially important to keep with a menu plan this time of year – but with everything going on it can be very difficult. The lessons I have learned are to stay realistic, plan for leftovers, and turn to help if you need it. By help I mean using a menu planning service. I turned to my clean eating emeals plan last week and this week for inspiration when my brain was on overload. It was very helpful. Here is my simple menu plan for the week.
Breakfast
Eggs and toast
Smoothies
Oatmeal
Make ahead tips
- All of these breakfast items will be made morning we eat.
Lunch
Hummus with pita and vegetables
Italian Deli Stromboli
apple
Greek yogurt with homemade berry sauce
Make ahead tips
- vegetables will be cut up and stored in the refrigerator.
- Stromboli was made a few weeks ago and is in the freezer.
- berry sauce will be made today or Wednesday.
Dinner
Homemade pizza – my family loves my homemade pizza so I make it a lot when everyone is in town.
Root Vegetable quinoa with toasted walnuts and goat cheese – this is an emeals recipe
Farro Soup with Chicken and Kale – this is an emeals recipe
Leftovers
Make ahead tip
- Pizza dough and root vegetables will be made ahead of time.
- Chicken and kale will be prepped ahead of time
