Menu Plan {November 26th – December 2nd} plus Make Ahead Tips and Resources

After last week I feel like I should only be eating raw salads for the next 6 weeks. Seriously between thanksgiving and all the leftovers I need to go on a full blown cleanse!! Sorry to much information I know!

I definitely feel on the sluggish side and will be the first to admit I am afraid to get on the scale this morning. Anyway, no need to dwell in the bad – but oh so good – choices made over the last 4-5 days. Nope! Time to get back into the swing of things and start planning so I do not undo the last 2 years of healthy habits I have formed for myself.

Let’s get right to it.

My menu plan this week is mostly using foods from my freezer and pantry. I did not have time to go grocery shopping this weekend nor will I this week so I need to get creative and use up what I have.

Breakfast

Slow cooker oatmeal

Baked oatmeal

Make ahead tips

  • I am going to make a batch of slow cooker oatmeal today to keep in the fridge all week.
  • For the baked oatmeal I am going to try and make a few batches to put in the freezer this week.
  • For the smoothies I will try to make kits or I will make completely and freeze in these Ball® Plastic Freezer Jars
    I purchased a couple weeks ago.

Lunch

Chipotle turkey burritos

Yogurt and homemade granola

  • When we have chipotle turkey tacos on Tuesday night for dinner I will make a double batch and use half the meat for the burritos.
  • Granola will be made tonight

Dinner

Grilled Chicken, Roasted Carrots, and Parmesan Brown Rice

Black bean and beef tacos

Chicken Tortilla Soup

Black Bean and Squash Soup

Chicken was frozen in the marinade. I took out a couple days ago to let thaw in the fridge so it is ready for tonight.

Tortilla soup, pizza dough, and meatballs were made a few weeks ago and are in the freezer.

I have roasted tomatoes in the freezer from the summer time. However, I have a bunch of vine ripen tomatoes I bought last week that I am going to roast up as well before they go bad.

Tacos and the black bean and squash soup will be made the night of.
