Menu Plan {November 11th – 17th}

Before I get to my menu plan this week I would like to take a moment and thank all of the veterans who have served and continue to serve in our military. We recognize and appreciate the dedication you give everyday along with sacrifices you are making to ensure our safety. Thank you!

Last week, I was in a funk. Between fighting off a lingering cold, feeling burnt out, along with the nonstop pace of life I did not feel like doing anything. It took everything in me just to keep moving until bed time – which by the way was never later than 9:30pm all week. However, all hope was not lost because by Friday night I found a cure for my funky mood. Wine and laughter!

I got together with a group of friends that I have not seen in 20 years!! It was awesome and I spent the entire night laughing so hard my cheeks hurt. There is just something special about hanging out with a group of people that have known you long before diapers, minivans, and the grind of life. Where the only thing we needed to worry about (back then) was our outfits for the Friday night football games and picking out a dress for homecoming and prom. It was EXACTLY what the doctor order. Sure I was exhausted the next morning…but it was a different kind of exhaustion that I was completely okay with.

Stay tuned because I might post a pic of all of us – just need to make sure everyone is good with it being posted first.

Lesson learned here mamas – you need to take time for yourself. You need to laugh and just let go…I promise the world will not fall apart. In fact, I guarantee you will feel better and more ready to take on the next round life has to throw at you. So if you have someone that you keep meaning to see or get together with just do it! The laundry can wait.

One more thing before I get to my menu plan. I know I am all over the place today but this is also really important to me. This month is Lung Cancer Awareness Month and a local SMK reader contacted me about an amazing event going on called Make Some Noise for Lung Cancer Awareness so I want to share that with you.

The Make Some Noise for Lung Cancer organization, founded and operated by Christine Dwyer has joined forces with the Niagara Falls Parks Department to recognize Lung Cancer Awareness on Friday, November 16, 2012. The Falls will be illuminated in pure white lights from 8-8:15pm and again from 9-9:15pm. This is going to be so beautiful and powerful so I hope you can make it. Please view their facebook event page for more information. If you are in the Western New York area I hope to see you there!

Shredded chicken was made last weekend and is in the freezer.

Sloppy joes were prepped today to go into the slow cooker tomorrow.

Shredded beef was made today for French dip sandwiches and blue cheese wraps later this week. I am not 100% of the shredded beef recipe yet – if it turns out the way I want I will post. If not then back to the drawing board.

I prepped the chicken with breading then froze it raw.

I have been using the menu planning resource Plan to Eat a lot lately. Slowly but surely I am getting all my recipes on there as well as my menu plans.
