I don’t know about you but I am happy to say goodbye to last week. Between the storm, my Honda Odyssey breaking down, and life being way to busy I felted totally defeated by Friday. I tried to relax as much as possible this weekend so I am feeling a little better for the coming week.
Anyway, I feel ridiculous even complaining considering what my SMK friends are going through in New York, New Jersey, and other locations that were devastated by Hurricane Sandy. It brings tears to my eyes every time I turn on the television and see these families struggling through this tragedy. Many of these families look just like mine – loving hardworking families who would do anything for their children. I am also reminded just how fragile life is and the importance for everyone to pull together in times of need.
I know in times like this it is easy to stare blankly at the TV and feel overwhelmed with wanting to help but having no idea what to do. Don’t feel like the only way to help is by giving huge amounts of money or traveling to volunteer hours to help out. If you can do that then of course that is wonderful. However, even just donating a small amount to the Red Cross to support the relief efforts can make a big difference. Imagine if everyone donating $10. That adds up fast! To donate text 90999 and type Red Cross in the message. The $10 will be charged to your cell phone bill and be automatically sent to the Red Cross. You can also donate via their website. I really encourage you to help out in any way you can.
This week’s menu plan will include a couple meals from last week that we did not get a chance to eat. Also, because this coming week is a pay week and I won’t grocery shop till the weekend, we will mostly be eating from the pantry and freezer.

Shredded chicken will be made today and put into chicken quesadilla freezer kits.
Chicken will go in marinade and into the freezer today.
