Menu Plan {October 15th – 21st} with Make Ahead Tips

It does not seem possible that we are already into the 3rd week of October. I know I say this every week but time sure does fly. These last couple months I have found it even more important to have a menu plan and a to-do list every week because once Monday hits I don’t have anytime to think about what to eat or do.

This week’s menu plan is going to be very easy. I still have a bunch of meals and meal starters in the freezer so we are finishing up what is left. The only thing I am really out of is breakfast burritos and pancakes. I had every intention of making them last week for dinner but that did not work out. Don’t ask me why because now I can not remember for the life of me. So this week is going to be a cereal and oatmeal week.

Also, I realized that I need to be more intentional with adding fruits and vegetables to my diet. One day last week as I was getting ready for bed it popped into my head that I did not eat one fruit or vegetable that entire day. I did not like that at all so I am going focus on getting more roughage in my system. One of the things I plan on doing this week is eating a large spinach salad for lunch everyday. I will let you know how it goes.

Okay let’s get to my menu plan for the week.

Breakfast

Kashi cereal

Slow Cooker Steel Cut Oatmeal

Make Ahead Tips

  • Oatmeal will be made overnight tonight or tomorrow

Lunch

Spinach salad with hard-boiled egg

PB & J’s – these are more for the kids

Pita with hummus

Yogurt

Apples or bananas

Make Ahead Tips

  • PB&J’s are in the freezer
  • Salads and pitas will be made the night before

Dinner

Tacos

Quesadillas

Homemade Pizza

Red clam sauce

Stuff Shells

Make Ahead Tips

  • All of these dinners are already prepared and in the freezer.
