Menu Plan {October 1st – 7th}

Hi there. I hope you all had a nice week. Are ready for the start of October? Personally, I can use a little more time because this month is going to be very busy for me. On top of the usually craziness at home and work things are really starting to gear up over here at Skinny Mom’s Kitchen. My new blog design starts to get created this week. I am so excited because SMK is growing up and getting a whole new look. But it is a little scary too because there are lots of decisions that need to be made.

Second, I have more blog related events that I am doing this month. I am covering an event this weekend for Libby’s fruits. You will read more about that in a couple days. Next, I will be presenting on freezer cooking at a couple of local MOPS (mothers of preschoolers) meetings. I am really looking forward to meeting some local moms and SMK readers. That will be fun!

Lastly, I should mention I am starting to write my first ebook. This I am super excited about but it is a lot of work. If only the words could just type themselves straight from my head. Let’s just say my sleep will be seriously lacking in the next couple months. I am looking forward to sharing what my book will be about but that will have to wait a little longer. Hopefully, in the next few weeks I can share more about it.

As you can see I am go to be very busy this month. For this reason I am going to be depending a lot on emeals and fresh 20, the two menu planning services I am subscribed too. Both of them have come in very handy with keeping a healthy menu plan going when my time is very limited.

Make Ahead Tips

  • We are almost out of pancakes and I don’t have time this week to make another big batch so that option will be replaced with Kashi cereal.
  • I will making the time today to put together breakfast burritos and bowls. Those are a must for my hubs during the week. I also decided to put some of the filling in bowls to freeze because my youngest loves the eggs and sausage but not the tortilla.

Turkey Tacos de “papa” – Fresh 20 recipe

Shrimp Risotto

Cheesy Tomato Bake – Fresh 20 recipe. This recipe uses leftover turkey from the Turkey Taco recipe. I love double duty recipes!

Spiced Pork Tenderloin with spinach salad – emeals recipe

Greek Pizza – emeals recipe

Leftovers, pantry, or freezer meal. I still have some meals left in the freezer we can choose from.

Make Ahead Tips

  • Turkey taco filling will be made today.
  • Pizza dough will be made today.
  • Pork tenderloin will be taken out a couple days before so I can put the rub on to marinate.

I feel really good about my menu this week. It is easy to prepare ahead of time and even the ones that must be made that night are still simple to make.

  1. You mentioned that one of your kids doesn’t like tortillas for breakfast burritos. I can totally relate. Instead of making burritos I make breakfast sandwiches with whole wheat biscuits or English muffins. Instead of a big bowl of eggs and good stuff I will bake all the ingredients in an casserole dish and cut then into squares that fit perfectly on biscuits or English muffins. And, wrapped tightly, they freeze just as well.
