We love tacos! I am pretty sure I have already told you that a millions times. But just in case you didn’t know – now you do!
I had tacos on the menu plan for the first day of school. I figured I might as well keep it easy on all of us. Well, guess what? I forgot to buy taco shells. Now sure how I managed to do that since I stocked my freezer with 3lbs of prepared taco meat the weekend before. I thought for a brief millisecond about sending hubs to the store to pick some up but then decided against it. You see, every time I send hubs to pick up something it is like he becomes a kid in the candy store. He goes crazy! Yes he comes back with the ONE thing I ask him to get but he also seems to pick up some new sugar cereal, ice cream, and who knows what else. I am not kidding! So to spare me the temptations I decided to get creative with what I had instead.
I took a look in my fridge and pantry and found an avocado, tomatoes, romaine hearts, taco sauce, and canned black olives. Are you wondering what I originally purchased all that for? Funny you should ask. I meant to make a chopped greek chicken salad but someone (not mentioning any names) ate all the chicken I precooked for it. Not sure why I had the avocado. I should know but at this moment I forgot. Hey what can I say it was the first week of school – I am lucky I can even get dressed and out the door. Anyway, everything happens for a reason and now I had all those ingredients to make a super yummy chopped taco salad.
This chopped taco salad was goo-ooo-oood! Super easy to make, family loved it, and another perfect way to use prepared, or even leftover, taco meat.
All the ingredients I used I had on hand already. Adjust the ingredients depending on what you have and the number of people you are serving.
Chopped Taco Salad

**15 grams of fat comes from the olives, sour cream, and cheese. If you want a lower fat salad then reduce or eliminate those items. By eliminating just the sour cream and black olives this recipe would have 361 calories 15 grams of fat and 8 WW Points (plus and old).
Ingredients
2 cups chopped romaine hearts
½ cup prepared taco meat (this recipe can use ground beef or turkey, I used beef)
1 plum tomato, chopped
¼ cup avocado, chopped
¼ cup sliced black olives
¼ cup prepared taco sauce
1 tablespoon sour cream
2 tablespoons taco cheese
Directions
Step 1. On a medium to large plate add the chopped romaine hearts. Then add the rest of the ingredients on top. Serve.
Make Ahead and Freezer Instructions
Taco meat can be prepared and frozen in portions ahead of time. The rest of the ingredients can be prepared and stored in the refrigerator for a quick lunch or dinner.
