I have another really easy recipe for you today – broccoli alfredo pita pizza. I am telling ya, this summer I have been so lazy when it comes to cooking. It has definitely been a crock pot or “throw it together” sandwich wrap kind of summer.
I really enjoy cooking from scratch but there are days – many days – when I want a quick meal I can prepare in minutes. For this reason, I always try to have some convenience foods in the pantry and freezer that can easily be transformed into a healthy lunch or dinner with minimal effort. Convenience foods I say? Yes even I have jarred sauce, canned beans, and other handy ingredients available. A little secret…you can even find bagged tator tots in my freezer…shhhh. Even us super moms need a break once in a while
Anyway, this pita pizza easily fits into the quick and easy recipe category. Last week I was alone for dinner and I did not feel like fussing around with warming something up or cooking anything. Yes I said alone! I thought about getting a bottle of wine but I had work to do and after a glass or two I am out for the count. So I opted for a comforting cream sauced pizza, a glass of water, and watched a little Food Network in peace and quiet – it was pure heaven.
This recipe is what you would call a pantry meal. Meaning, I had all the ingredients on hand and did not have to go purchase any extra. It was inspired by a lonely pita in the refrigerator, a bag of frozen broccoli in the freezer, and some leftover jarred alfredo. Thinking back to my chicken alfredo pizza my mind went straight to broccoli alfredo pizza. Yum!
This easy peasy pizza was so good and satisfying. Not to mention pita pizzas work great for keeping portions in check while still enjoying the tasty foods we love – which is exactly what I did.
Broccoli Alfredo Pita Pizza Recipe
Servings: 1
Serving size: 1 pita pizza

Ingredients
1 whole wheat pita (no more than 150 calories)
¼ cup lite alfredo sauce
¼ shredded mozzarella cheese
1 cup frozen broccoli
Directions
Step 1. Spread alfredo sauce over the top of the pita. Evenly sprinkle mozzarella cheese and broccoli over the sauce.
Step 2. Bake for 15-20 minutes or until cheese is melted.
