This time of year there are tons of festivals around town. One of our favorites is the Italian Festival. You can get some of the best pizza, pasta, sausage, cannoli, tiramisu, and a million different Italians specialties. I usually go right for the cannolis and my hubs runs for the sausage and peppers. He can eat an obscene amount of sausage and peppers and you don’t want to interrupt him as he savors each bite – yes I guess you can say he loves it!
Over the weekend I decided to make a homemade version of one of his favorite Italian foods. However, this time I was inspired to put it on a pizza and it was gooooood! You all know that I love creating new pizzas and I am proud to add this hearty veggie filled one to my collection. It is so easy to make and was perfect for a quick weekend dinner.
My only tip with this pizza is you must cook the vegetables before you put them on the pizza. If you don’t they will release a lot of liquid and you will have a watery mess in the middle of your pizza – ask me how I know?
Also, the sausage I used was precooked so I was able to just put it on the pizza when ready to bake. However, if you use raw sausage I recommend cooking it ahead of time as well.

Sausage, Peppers, and Onion Pizza
Servings: 8 slices
Serving Size: 1 slice
Calories: 300 * Carbs: 36 * Fat: 12 * Protein: 14 * Fiber: 3 * WW Points +: 8 * Old Points: 6
1 medium red pepper, diced
1 medium green pepper, diced
1 medium onion, diced
1 12 or 14 inch pizza crust (you can use ½ of this pizza dough recipe)
½ cup of pizza sauce (I use this recipe)
1 ½ cups shredded part skim mozzarella

Step 1. In a frying pan, coated with cooking spray, sauté the peppers and onions until tender but still a little crisp. This takes about 5-6 minutes. Set aside.
Step 2. Heat oven to 375 or whatever the temperature says on the crust you are using. Stretch out the pizza dough to a 12 or 14 inch pizza pan. If using my crust recipe then par bake (just means cook it a little bit) the pizza dough for 6 minutes.
Step 3. Layer the sauce, cheese, onions, peppers, and sausage evenly on the pizza dough. You want to get all the ingredients in one bite.
Step 4. Bake for 15 – 20 minutes or until cheese is melted.
Freezer Cooking and Make Ahead Instructions
I have not frozen this pizza as a complete meal yet so I am not sure if it would freeze correctly. Of course, you can prepare and freeze the dough ahead of time. You can also have all the peppers, onions, and sausage cut up ready to use the night you would like to make this.
