Menu Plan {June 24th – 29th}

Summer is officially here! I actually like the summertime for reasons other than lazy days at the pool and barbecues. Don’t get me wrong I like all those things and more about summertime but there is something else that gets me a little more excited. You see my husband is a teacher so he has the summers off and assumes the title of Mr. Mom over the next couple months. This means, because he is home, there is no rushing around in the morning; running late dropping the girls off at school; or worrying about lunches being made. It is AWESOME!! I love being able to wake up, actually do my hair, and just leave for work in peace.

Even though the mornings are easier (for me) during the summer months there are some other unique challenges when it comes to menu planning during this time. Days and weeks are spent going to our family country property; swimming at my parent’s pool, or just being a tourist in our own town. Basically, this just means we are always on the move and need easy foods ready to grab and go. If I am at work and they don’t have foods ready to eat I can guarantee hubs will be reaching into his wallet and ordering out – this is not good for our bank account or bodies. For this reason, I will be putting together an easy peasy menu plan that even my hubs can follow.

Before I get to the menu plan let me quickly go over my weight loss progress. I reached my goal of 140 pounds last week! I still have a bit more I want to lose but I am going to focus on maintaining that weight for a little bit before I set any new weight loss goals. I talked a couple weeks ago about using google calendar to organize my menu plan and exercise and that was extremely helpful in keeping me focused.

Also, I know I have not posted a freezer cooking weekend challenge in a couple weeks. Sorry about that. Between recitals, graduations, showers, parties, and other end of the school year activities my time has been very limited. My plan is to do a big freezer cooking session this weekend. However, before I do that I need to use up everything in the freezer and defrost it because it is getting some frost build up.

Let’s get to the menu plan. In addition to using up everything in the freezer I am also in the process of developing a bunch of salad recipes for a company so this week’s menu is going to be heavy on roughage side. This is fine with us because, with the summer here, we tend to eat a lot more salads anyway.

Southwest Salad Pizza

Asian Pork Salad and/or Wrap – pork is in marinade in the freezer.

Balsamic Chicken with Arugula Panini – making basic shredded chicken today in slow cooker. This will also be used for southwest salad pizza.

Smoked Turkey and Ham Bread Bowl Salad

Buffalo Chicken Wraps - still have the chicken in the freezer.

Tacos – still have some in the freezer from a couple weekends ago.

  1. I can totally relate about having readily available food – hubby & I are both teachers, and if I don’t have it ready to eat, he’s VERY prone to going out! That said, your menu looks yummy. :)

  3. Congrats on meeting your goal! I am not there yet but I am feeling good that since Jan I have been weekly meal planning and freezer cooking! And my husband is the happy one now-he’s usually Mr.Mom or as he calls it “Daddy Day Care” and I’m a teacher so he’s “off” for the summer!
