Freezer Cooking Weekend Challenge Update: Beef Taco Filling

Here we are again – Sunday night and another freezer cooking weekend challenge behind us. I hope you find these little weekend challenges helpful. My goal, with these mini challenges, is for you to see that even the busiest of people can find time to prepare healthy foods ahead of time for the freezer. So, even if you are not participating, my hope is that you are learning and feeling inspired to do so in the near future.

The freezer cooking challenge this weekend was beef taco filling. Like I said yesterday, I would be using a slow cooker taco recipe.

All of my grocery shopping was done Thursday night after work because I knew my time would be very limited on Friday and Saturday.

I started around 6:30am. The first thing I did was put the beef taco filling recipe together for the slow cooker. It was super easy and came out very tasty. I plan to share it later on in the week.

While the taco filling was slow cooking away I put together 27 breakfast sandwiches. This required cooking the bacon, eggs, and assembling the sandwiches. I also made 8 cups of rice in the slow cooker and a loaf of honey wheat bread in the bread machine.  Between the slow cooker, bread machine, and rice cooker my hands on cooking time was very limited – perfect for this busy weekend.

The taco filling only cooked for about 3 hours on high so after it was done I started a batch of basic shredded chicken. After it was done I turned it into buffalo chicken. I will share this super easy slow cooker buffalo chicken recipe in the next week as well.

The last recipe I made was an oven pancake. I was getting very lazy around the time I wanted to make a batch of pancakes so I decided to throw the pancake batter into a 9 x 13 pan and bake it. The flavor was really good but I need to work on the texture and baking time. I am going to tinker with the recipe this week and post once I get it right.

All in all it was a productive freezer cooking weekend challenge. Here is a picture of my final results.
