I had every intention of posting the freezer cooking weekend challenge Friday night – but if you follow my Facebook page then you know I passed out around 7:00pm after spending the day chaperoning 20 preschoolers on a field trip. Then today it was dance classes and a birthday party which is why I am only getting around to this now at 4:30pm.
This self proclaimed supermom is ready to hang up her cape and have a martini – which by the way I will be having tonight with the hubs to celebrate our 11 year wedding anniversary.
Ok I totally digressed…let’s get back to the freezer cooking weekend challenge. This weekend I am keeping it very easy – beef taco filling. Tacos are my go to meal and you will find them on my menu plan every week without fail. Kids love them and they are super easy to make and are one of the best freezer recipes around. If you are just starting to freezer cook than I highly recommend starting with taco filling along with these 9 other easy freezer cooking recipes.

If making tacos wasn’t easy enough I am going to try a new slow cooker recipe so tomorrow I can just set it and forget it. The recipe I am using is adapted from my favorite slow cooker cookbook, Slow Cooker Revolution

Of course, with freezing taco filling, you are just freezing the seasoned ground beef (or turkey) into portions to use for future meals. You would cook up the shells the night you will eat.
All of my freezer cooking will happen tomorrow because tonight Hubs and I are going out. In addition to the taco filling I am making breakfast sandwiches, pancakes, and will be prepping ingredients (not necessarily freezing) to use in recipes throughout the week.
