I find it unbelievable that June is already here – half the year is behind us and before we know it we will be planning for the holidays! Ok, maybe that is a little dramatic but seriously time is flying.
Last week was a good weight loss week for me – I lost 1 more pound bringing me a little closer to my June goal weight of 140 pounds. As usual, I did not work out as much as I should but I still did manage to fit in a couple walks and dances with the kiddos. I find the working out component of losing weight to be so daunting. I know that if I could just make it a priority and commit then the rest of my weight would melt right off. Focus Tammy focus! Yes that is me giving myself a pep talk.
Ok let’s get to my weight loss goals and plan for the week.
- Keep calories at 1400 – doing this every week has been my saving grace with losing weight. As always, I use my trusty My Fitness Pal to keep on track.
- Run for 45 minutes on my treadmill Tuesday, Thursday, Saturday, and Sunday. I will be plugging in reminders into Google Calendars.
- No eating after 7:00pm.
- Drink lots of water.
Menu Plan {June 4th – 10th} and Make Ahead Action Plan
This menu is going to consist of a lot of the meals and ingredients that are in my freezer and pantry. I anticipate doing some extra freezer cooking this weekend to stock up again.

Breakfast Options
Slow Cooker Steel Cut Oats – I will be making these tonight
Breakfast Sandwiches – I did not have a chance to make these over the weekend so I will be making them every morning the old fashion way.
Kashi Cereal
Lunch Options
Chicken Quesadillas – I have a kit in the freezer I made a couple weeks ago. I am going to put them together tonight for lunches over the next couple days.
Peanut Butter and Jelly Sandwiches – I will be these together the night before we need them. If I get real ambitious I will make a few for the freezer.
Thai Pork – we are having this tonight for dinner so I know there will be lots of leftovers.
Taste of Home Mediterranean Bulgur Salad
Greek yogurt with granola or fruit – I am making the granola tonight.
Snack Options
Energy Bars – I still have a bunch leftover from the weekend challenge I did a couple weeks ago.

Dinner
All dinners are served with a salad or vegetable.
Thai Pork – I put together a slow cooker freezer kit last weekend. This is cooking as I type for dinner tonight.
Grilled Asian Chicken with Baby Spinach Salad – put together the chicken in the marinade last weekend.
Homemade Frozen Pizza – Made a bunch this weekend
Grilled Cilantro Chicken with Coconut Lime Rice – Prepared the chicken in the marinade last week. Will make the rice the night we eat.
Artichoke and Spinach Stromboli – I am going to make the dough tomorrow or Wednesday. The rest will be put together the night we eat. This is a clean out the pantry meal so I don’t really have a recipe for it.
Leftovers or clean out the pantry meals – not sure what those will look like yet.
