Happy Memorial Day! Before I begin this week’s menu plan post I would just like to take a moment and thank the service men, woman, and their families for all that they sacrifice and do for our country – Thank you!

It has been two weeks since I posted a menu plan – just in case you didn’t notice. I was working on a bunch of new recipes so I tried to keep my menu plan open so I could be free to experiment. As much as I love developing new recipes I really missed the structure of a menu plan – let’s just say there were a couple cereal for dinner nights. Moving forward I will be creating a menu plan that gives structure for my family but also allows for me to continue with developing new recipes. Wish me luck.
Weight Loss Action Plan
Before I get to this week’s menu plan let’s first talk about my weight loss goals and action plan. Right now I am at 145 pounds – 5 pounds away from my June 1st goal of 140. I will not make my goal by then, but hopefully soon after.
My weight loss action plan for the week:
- Keep daily caloric intake to 1400. I will be plugging my food into My Fitness Pal the day before to keep me on track.
- Run for 45 minutes on my treadmill Tuesday, Thursday, Saturday, and Sunday. I am going to program Google Calendar to send me a reminder the night before so I remember to get my workout clothes ready.
- Drink 32 ounces of water
a day.
- No eating after 7pm.
Menu Plan {May 28th – June 3rd} and Make Ahead Action Plan
Good thing it is a 3 day weekend for me because I was not able to freezer cook anything Saturday or Sunday. I am going to be a freezer cooking queen today! Some meals (see notes) are already prepped or prepared in the freezer – thank goodness!

Breakfast Options
Spinach and Feta Oven Omelet Breakfast Sandwiches (I will be using English muffins this time) – these will be made today.
Bacon and Cheddar Breakfast Sandwiches – these will be made today.
Buttermilk Pancakes – these will be made Wednesday night. I have a new recipe I will be sharing soon.
Lunch Options
Taste of Home Bulgur Salad – this will be made tomorrow. I will be eating this for lunch as well as with grilled chicken for dinner.
Baby Spinach Salad with Smoked Turkey and Artichokes – I will make these the night before. Will post recipe soon.
Turkey Bacon Ranch Wrap – I will make the night before.
Strawberries and Greek Yogurt – I will make the night before.

Mid Afternoon Snack
Dinner
**All dinners will include a salad or vegetable.
Sloppy Joes with a Tomato and Fresh Mozzarella Salad – This is already prepared and in the freezer. I will warm up on the stove top.
Chicken and Sausage Jambalaya – I prepped and froze the chicken and sausage a couple weeks ago. I will take the meat out the night before to thaw in the refrigerator. This meal should come together simply with the meats already prepped. I will share recipe soon.
Grilled Cilantro Chicken and Bulgur Salad – Chicken will be put together today as part of this weekend freezer cooking challenge. The bulgur salad will be made tomorrow.
Chicken Quesadillas – I made chicken quesadillas freezer kits 2 weekends ago when I did the basic shredded chicken freezer cooking challenge.
Goat Cheese Risotto with Asparagus – I made this last night and it is SOOOOO good! I will post recipe today.
Grilled Pork Teriyaki Tenderloin with Brown Rice– Tenderloin I will prepare in its marinade today. Rice will be made and frozen tomorrow after work.
Naan Pizza with Goat Cheese and Roasted Red Peppers – This is so easy to make and will be prepared the night of. I will share recipe soon.

Made my first freezer cooking breakfast burrittos! I’ve been making them every day “live” but finally took the plunge. Since it is just me (likely) who will eat them, to be safe I made a half recipie of the turkey sausage, eggs & sprinkle of cheese. I figured if I do something wrong, I can correct it in the next batch. I let the eggs cool while I ate mine for today and then made them. I’m pretty psyched.
I’m going to try planning my recipies better and attack the weight loss process more vigorously as well.
