Freezer Cooking Weekend Challenge: Granola Bars

This weekend’s freezer cooking challenge is going to be one of my favorite snacks to make – granola bars!

Earlier this week I talked about the importance of having healthy snacks readily available – especially when the mid afternoon slump hits. My go to snack is always homemade granola bars.

Homemade granola bars are so much better than store bought. For one they taste better and because you control the ingredients they are much better for you.  Also, granola bars are easy to make, freezer friendly, and are adaptable to whatever ingredients you have on hand. I always seem to make batches of granola bars when I need to use up pantry ingredients.

For instance, check out all of these ingredients I have hanging out in my pantry. They are practically begging me to make them into tasty granola bars.

Because I am always using random pantry ingredients to whip up granola bars I rarely follow a recipe exactly. Typically, I use a a couple base recipes and then adapt as needed. Who knows with all these ingredients maybe I will make a new creation :)

Here are the granola bar and power bar recipes I will be following this weekend. Like I said, I will be using them as a base since I don’t have exact ingredients.

Skinny Taste Chewy Granola Bars

Playgroup Granola Bars

Alton Brown Granola Bars

Ellie Kreiger Power Bars

Each recipe should take around 15 minutes to prepare then about 20-25 minutes of baking time, depending on the recipe.

Freezer Instructions

These recipes do not come with freezer instructions so I thought it would be useful to add them.

Prepare the recipe completely. Let the bars cool. You can freeze these 2 ways. 1. Flash freeze, then place in large freezer bag, and freeze. 2. Wrap bars individually in plastic wrap, place in large freezer bag, and freeze.

To thaw, take desired amount of bars out in the morning and they will thaw within an hour or so on the counter.

These are perfect for snacks or lunches.

Not sure I will be freezer cooking much more than these granola bars this weekend. Maybe I will make a couple batches of pizza dough. But other than that I think I am going to take it easy and enjoy the outdoors with my kids.
