Happy Mother’s Day to all my fabulous mommies out there! Don’t tell anyone, but I think I like this day better than Christmas. I am sure you can agree there is nothing better than breakfast made by the hubs and kids while sitting, coffee in hand of course, vegging out to Food Network all morning. Yes, Mother’s Day is the bomb!
Unfortunately, the world does not stop on Mother’s Day so even though I would have loved to sit and do nothing all day I knew I had to be somewhat productive – please note I did say somewhat. Given my projected laziness I knew I had to keep freezer cooking on the light side which is why I opted for my Mexican Slow Cooker chicken recipe for this weekend’s freezer cooking challenge. Good thing, because I am not sure I could have done much else.
I grocery shopped Saturday morning and was able to get the recipe going early Sunday. My husband did not want me doing any work today but I assured him that once I started the slow cooker he was free to pamper me all day.
Besides the Mexican Chicken I did take another 20 or minutes or so to put together some bean and cheese burritos along with a batch of brownies to bring to my parents for dinner. A little side note, I totally forgot to bring the brownies to my parents. I had every intention – I swear I did – but as usual I got distracted and left them on the end table. Oops.
Here is a picture of my freezer cooking weekend challenge accomplishment. I decided to put together Chicken Quesadilla Freezer Kits using the Mexican shredded chicken. This way I have two meals that are ready to prepare for an easy “even my hubs can do it” quick dinner.
