Menu Plan {May 7th – 13th} plus Weight Loss Goals and Make Ahead Action Plan

I can’t believe we are already going into the second week of May. Seems just like yesterday we were ringing in the New Year. Craziness! I guess time flies when you are insanely busy – oops I mean having fun.

These last two weeks were more busy than usual with my prego sister in town. Lots of baby talk and shopping! She left on Friday, which was sad, but she will be back in July. This time with my new little nephew – can’t wait! I have been a mom for 7 years but this the first time I am going to be an Aunt.

Even though I have been distracted by my sister’s belly and all the baby talk and shopping I was still able to lose 1 pound this week. I am not gonna lie – I was a little scared to get on the scale – seriously the food my mom feeds us is obscene, but good.

I am now 5 pounds away from my goal for June 1st! Time to get really focused these next few weeks!

Weight Loss Action Plan

Now that it is getting warmer most of my exercising is spent outside going for walks. I also, have enjoyed turning on the radio and dancing with my kids. For some reason they find that hilarious – not sure why because back in the day I knew how to move it. To keep the weight loss progress going I am going to keep up with this activity but try to add some more strength training in. My arms and tummy could definitely benefit from some toning.

I have been hit and miss when it comes to keeping up with my food journal. So, this week I will focus on my food journal to keep my calories and portions under control. As always, I am trying to keep my calories to no more than 1500 a day – anymore and I will not lose weight.

Menu Plan {May 7th – 13th} and Make Ahead Action Plan

Breakfast

Breakfast Burritos and Sandwiches – both of these were made yesterday during my freezer cooking weekend challenge.

Pancakes ~ A triple batch will be made Wednesday or Thursday depending on which night we have breakfast for dinner.

Kashi Cereal

Lunch

Hummus Wraps with tomatoes and red onion

Bean and Cheese Burritos – I made a few of these yesterday but ran out of burritos. I will be making the rest later in the week.

Greek Pizza – I prepared this on Friday. After it was cooked I cut and froze individual portions. These heat up so nice in my toaster oven at work.

Frozen PB & J’s - I made the bread over the weekend. I used a buttermilk whole wheat from the The Bread Lover’s Bread Machine Cookbook. If you are looking for bread machine cookbook this is the one to get. I have not made a bad recipe yet. I will put the PB & J’s together tonight.

Leftovers

Dinner

Sloppy Joes with Whole Wheat Baked Macaroni and Cheese and Corn – Sloppy joes will be made the night of. Macaroni and cheese is already made in the freezer. I will be making a new sloppy joe recipe. If it turns out good I will share.

Linguini and Red Clam Sauce – This super easy sauce will be made the night of.

Pancakes

Grilled Pizza Pockets – I will make the dough tomorrow after work. The rest of the recipe will be made the night of.

Tortellini with Asparagus Pesto (new recipe) – Because this is a new recipe I am going to make this Saturday or Sunday when I have more time to play around with it. If it is good I will share.

Chicken Enchiladas – I know you are probably sick of seeing this on the menu but we did not eat this last week and need to finish it up. Also, I have the recipe scheduled to post on Thursday for those that have been asking for it.

  1. And for your weight loss you eat all of this stuff? That’s pretty impressive. it opens up for me the ideas that you can eat like this and still lose weight. How much weight have you lost and how much more are you trying to lose?

    • I have lost close to 40 pounds. I am trying to lose another 20. While it looks like a lot I always make sure that my portions are under control. That ways my calories never get above 1500 or so. I actually try to keep my calories below 1500 to help keep my weight loss going. I really do believe with portion control and making your own foods you can still continue to enjoy many of the foods you love and still lose weight. If I had to eat bean sprouts everyday I would not be successful – believe me! Thanks so much for your comment.
