This weekend marks Skinny Mom’s Kitchen first freezer cooking weekend challenge. I decided breakfast sandwiches and burritos would be the freezer recipe to get us started.
Breakfast is, as we all know, the most important meal of the day. However, because mornings are usually filled with juggling 10 things trying to get the kids out the door on time, it can often be forgotten. Having a freezer full of breakfast sandwiches and burritos will help provide your family with a nutritious breakfast fast and on the go if need be.
Originally, I wanted to prepare the recipes yesterday but between all our activities I just ran out of time. Actually, I still had tons of housework to do today, so I did not start putting these together till around 3:00pm. Once I got to it, the breakfast sandwiches and burritos were fully prepared within a couple hours. In the end, I made 15 breakfast burritos and 10 breakfast sandwiches. This amount will get us through the next couple weeks.
I always feel so accomplished when I put my bags full of meals in the freezer.
Additionally, I made 5 bean and cheese burritos (I would have made more but I ran out of tortillas) along with 2 loafs of wheat bread for frozen PB & Js. I will put the PB & J’s together tonight or tomorrow morning.
