Freezer Cooking Weekend: Update

Saturday has come to a close and I thought you would enjoy a little update on my freezer cooking session. You can read my strategy for the weekend here.

First of all, I should start with a disclaimer because I am so delusional I may or may not speak in complete sentences.

Here is how today went…

For the most part today was productive. I didn’t really get to dive into freezer cooking till after 2:00pm because we were at dance class. However, like I said earlier today, I was able to get meal starters going in the slow cooker, rice cooker, and bread machine. These starters were the Mexican shredded chicken, brown rice, and pizza dough.

Once I started cooking I realized that I forgot to purchase clams and ricotta cheese. Don’t ask me how I forgot these main ingredients but I did. So annoying! I hate when I make stupid mistakes like that. Therefore, the red clam sauce and stuff shells did not get put together.

Another lesson learned today was never to make plans at night when I am planning on doing a large freezer cooking session. I had every intention of going to my parents at around 6:30pm but I did not finish until around 8:30pm – by that point it was too late and I was totally whipped. I was bummed because my mom had rigatoni and sauce waiting for us.

Always plan a large freezer cooking session to take longer that you think and be flexible.

Last lesson learned today was to plan for dinner. I know this sounds weird since I was cooking up what seemed like a million dinners. However, when dinner time came around I was elbow deep in wrapping foods and totally forgot my family needed to eat. Oops. I guess, now that I think about it, I was planning on going to my parents for dinner. I guess the lesson here is to have a plan B.

Good thing I had dough, sauce, and cheese ready to make a pizza. There were even leftovers from the pizza that I wrapped and froze for lunches this week. All was not lost.

Besides the clam sauce and stuff shells I was able to get everything else that I intended to make today complete.

Here is a quick snapshot of all the meals before heading into the freezer. In case you are wondering about the packages on the left those are Glad SimplyCooking OvenWare containers. They are made to go from the freezer to oven.

This is my first time using these containers but I have heard and read good things about them. Curious if any of you have had experiences with these containers? I bought them from Amazon because I could not find them anywhere else. Let me know your thoughts?

Tomorrow I am not planning on doing too much freezer cooking. I think I will just assemble the pizzas and then make the chicken fried rice and granola. The rest I will make little by little throughout the week.

  1. I LOVE, LOVE, LOVE ovenware! I haven’t used it as much in my own freezer, but we moved last spring and I had 3 or 4 meals in the freezer so I didn’t have to worry about dishes the last few days of the move. I also use them to take dishes to friends that are laid up, no worries about getting my container back that way!

  2. I love that all this is made ahead of time and ready to go later but it is a waste to use all those Freezer bags and then throw them away. Tupperware has a product called Freezer Mates that lets you freeze the food and the plastic is not going to crack or break and if it ever does their is a lifetime warranty, but you only buy it once and it doesn’t let the food get freezer burned. You do such a great job with the food it is a shame to pay so much for the bags. And the tupperware stacks nicely and doesn’t slide around like a bag. I just thought you might be interested in this.
