Skinny Mom’s Kitchen 2011 Year in Review and What’s in Store for 2012

When I started Skinny Mom’s Kitchen back in March 2011 I really did not know what I was doing or what to expect. All I knew was, after many years, I finally lost the weight (40lbs to be exact) that was hanging around for the last 10 years and I wanted to help others do the same.

After telling “my story” many times to friends and family asking me “how I did it” I realized it was impossible to teach everything I knew about freezer cooking, make ahead meals and losing weight in a 10 minute conversation. Therefore, Skinny Mom’s Kitchen was born.

I remember vividly the day standing in my kitchen talking to my husband about it. I said “Honey, now that it is obvious I am losing weight so many people are asking me for advice and tips. I should just start a blog called Skinny Mom’s Kitchen.” Hubs says “That is an AWESOME idea! Go for it!.” Whoolah!

Since then the journey has been amazing.  In addition to the blog there is also the SMK Facebook community which is now almost 5000 fans strong! There I have met some amazing supportive woman from around the country and even in different parts of the world. One thing I learned over the last year is no matter what part of the world we are from we all share the same struggles and triumphs when it comes to keeping ourselves and families healthy.

Of course, Skinny Mom’s Kitchen would not be complete without the food. I learned so much about cooking and baking this year. Not only how to put recipes together but how to prepare everything ahead of time and freeze. In case you didn’t know I list the make ahead and freezer instructions with each recipe. You can see all my recipes here.

Lastly, since the start of this blog, my menu planning skills have become stronger each week I post my menu plan. Menu planning combined with freezer cooking, in my opinion, is the key to sanity and healthy eating. I hope I have made you a believer.

Well that is 2011 in a little itty bitty nutshell. I don’t even feel like I scratched the surface with what I want to share with all of you. I have so many ideas for 2012.

However before I plan out my yearly calendar for Skinny Mom’s Kitchen I want to hear from you. I want to make sure that I am providing you with the information you feel would be THE MOST helpful to you.
