Bean and Cheese Burritos: Basic Freezer Meal Recipe

This bean and cheese burrito recipe, like my homemade granola,  is another one that I wish I would have started making years ago. They are so easy to make and are the perfect grab and go lunch.

110 calories come from the cheese so if you are looking to reduce calories more then minimize the amount of cheese.

Bean and Cheese Burritos: Basic Freezer Meal Recipe

Servings: 8 burritos

Serving Size: 1 burrito

Approximate nutritional information:

Calories: 305 * Carbs: 35 * Fat: 13 * Protein: 13 * Fiber: 5

Ingredients:

8 pack tortillas (no more than 150 calories)

1 16 ounce cans Eden Organic refried beans (you can use whatever brand you like)

16 ounce package shredded taco cheese

Directions:

Step 1. Lay tortillas flat and spread ¼ cup refried beans around center.

Step 2. Sprinkle ¼ cup shredded cheese on refried beans.

Step 3. Roll up into a burrito

Step 4. Repeat with each burrito.

Freezing Instructions

Step 1. Wrap burrito in plastic wrap.

Step 2. Place all of the wrapped burritos in a labeled freezer bag.

Reheating Instructions

Take burrito out of freezer bag and remove plastic wrap. Wrap in paper towel and microwave for 1 -2 minutes or until heated through.

Serve with salsa or condiment of your choice and enjoy. Remember to count the calories of anything you add to this meal.

    So excited about these! I just made the slow cooker refried beans and wrapped up a bunch of burritos. I used the smaller 6-inch tortilla shells and made 19 burritos. I made them primarily for my lunches, but these will also be a great “hurry up, we need to get out the door now” protein-packed snack for the kids.

    Hey skinny mama, I’m just curious why you don’t use FAT FREE beans and FAT FREE cheese in your recipes…..or egg white etc. in your breakfast sandwiches? Seriously, you will cut your calories and bootie in half! ….yes, I just said bootie. Much love, JJ

  5. So Easy! I just made a bunch of these and put a little enchilada sauce in each. They are in the freezer now labeled “Enchilada Pockets!” : )
