Grilled Cheese and Pepperoni Pizza Homemade Hot Pockets

About a month ago my oven broke.Yes it was a sad day.

We have yet to replace it because the one we had was an ancient wall oven in a size that is not readily available anymore and to special order one would cost a fortune. Ugh! Therefore, we are holding off until we decide what we want to do.

Anyway, the real issue here is I have not been able to make homemade pizza in weeks. Priorities people :)

Just a few weeks ago I made a few batches of homemade pizza dough using my bread machine. Since then the dough has been sitting in my freezer and I have been on the hunt to find a way to prepare it without an oven.

Finally, last week I came across this grilled pizza pocket recipe by $5 Dinner Mom Erin Chase. Bingo! I decided to give it a Skinny Mom’s Kitchen twist using my homemade pizza dough and portion controlled filling.

Using my Wolfgang Puck Indoor Grill the results were amazing! It is my preference to use the indoor grill for all my grilled sandwich type recipes as opposed to the outdoor because I feel I have more control over the temperature. However, you certainly could use your outdoor grill.

Grilled Pizza Pockets

Servings: 6 pizza pockets

Serving size: 1 pizza pocket

Approximate nutritional information:

Calories: 307 * Carbs: 43 * Fat: 6 * Protein: 17 * Fiber: 2

Ingredients:

1 recipe pizza dough (enough for a 12 inch crust pizza)

3/4 cup pizza sauce

1 1/2 cups of mozzarella cheese

16 slices turkey pepperoni

Directions:

Set your indoor grill to about 375 -400 degrees.

Step 1. Separate the dough into 6 pieces.

Step 2. Form each piece into a circle approximately 7 x 7 inches.

Step 3. On one end of the circle place 1/4 cup of cheese, 2 tablespoons of sauce, and 4 slices of turkey pepperoni. I started and ended with the cheese this way as it melts it forms a barrier between the dough and the sauce.

Step 4. Fold over the dough and pinch it closed all the way around.

Step 5. Grill on each side until dough is cooked all the way through about 5-7 minutes on each side.

Step 6: Remove from grill and rest for about 3 minutes. The inside is very hot so be careful.

*** Please note you can easily make this pizza pocket recipe in an oven. Bake at 400 degrees for 15 minutes or so depending on your oven

Make Ahead and Freezer Instructions

The pizza dough can easily be made ahead of time and frozen for this meal. Additionally, these pizza pockets can be made completely and then frozen. After they cool wrap in plastic wrap, store in freezer bag, and place in the freezer.

Reheating Instructions

This pizza pocket can be taken from the freezer and reheated in the microwave. To do so, take out of the plastic wrap, place paper towel around it, and microwave on high for about 2 minutes or so. If you like a crispier crust you can reheat in toaster oven or regular oven at 375 degrees for about 10 minutes or until hot.

  6. Does anyone have a good whole wheat dough? We try really hard not to use white flour/rice as it does not sit well with me not to mention whole wheat is healthier. If you do could you please let me know. I am a total dough idiot so you have to be specific with what kind of yeast I am to buy.. like I know it comes in packets but Ive seen different kinds AND its in like teaspoon measurements and I never know what to buy. Just like when a recipe calls for red wine and I go to the store and stand there for 30 minutes trying to figure out what to buy!
