This was a crazy busy weekend for me. The girls had their dance recital Saturday and I was determined to do a big freezer cooking day Sunday. To make sure I was prepared for my freezer cooking day I did all of the shopping Saturday before the recital. Can you say exhausted by 10:00pm? Oh and did I mention in the midst of all that my daughter spiked a 104 temp and had to be brought to urgent care where she was diagnosed with step throat. Yes that made for a very busy somewhat stressful weekend. I was still able to get around 10 freezer meals done, not as many as I planned, but as a wise person once said “life happens when you are trying to plan it”.
Below is my menu plan for this week. I did lose the 2 pounds I gained last week but I am still trying to lose the last pesky 8 pounds to get to my goal weight. Therefore my menu plan will stay between 1300 – 1500 calories.
Here are my tips for preparing this week’s menu ahead of time.
- Bolognese sauce made and stored in the refrigerator
- Pesto made and stored in the refrigerator.
- Chicken cooked, shredded, and stored in the bags in the freezer.
- Meatballs cooked and stored in the freezer.
- Meatloaf cooked and stored in the freezer.
- Strawberries cleaned, sliced and stored in the refrigerator.
- 2 loafs of bread made.
