Two words…hot sauce and blue cheese!! If you are from Buffalo NY then you know exactly what I am talking about. These two sinfully delicious condiments are a staple in every Buffalonian kitchen and after trying this guilt free recipe it will be in yours too.
I actually planned on making this wrap awhile ago but I was having a difficult time finding a blue cheese dressing (homemade or prepared) that was low in calories and tasted good. Then I found a yogurt blue cheese dressing offered by Wegmans (my local grocery store) and the waters parted. This dressing is absolutely delicious and only 80 calories for 2 tablespoons.
Warning: This wrap is messy and probably should not be consumed wearing a white shirt but at only 423 calories who cares!
Buffalo Chicken Wrap
Serving size: 1 wrap (1 cup of chicken mixture, 2 tablespoons blue cheese dressing, lettuce, and wrap)

2 pounds chicken breasts
1 tablespoon extra virgin olive oil
2 tablespoons butter
1/2 cup Frank’s hot sauce
4 100 calorie wraps or burrito size tortillas.
2 tablespoons per wrap yogurt blue cheese dressing
2 cups chopped romaine lettuce
Step 1. Cut chicken in bite size pieces.
Step 2. Heat oil and butter in pan. Add chicken and cook until done (no pink in middle)
Step 3. Turn off heat and then add in the hot sauce a little bit at a time. Depending on how spicy you like your food you may not use all the hot sauce.
Step 4. Prepare one wrap at a time. Warm up wrap or tortilla in microwave or pan then spread 2 tablespoons of blue cheese around the center. Add chicken mixture then 1/2 cup of romaine lettuce and fold up.
This recipe can easily be frozen for a future lunch or dinner. Cook up the chicken mixture as described in steps 1 – 3 then place in freezer bag or container to be put in the freezer. The wraps can also be bought ahead of time and frozen. When you are ready to make this then take everything out the night before to defrost in the fridge. Warm chicken up in microwave using a microwave safe dish or again using a pan on the stove.
Special note: The nutritional information was calculated if you were using Flatout Flatbread Wraps in this recipe. If you use a different brand the nutritional information may change. Also, to reduce the calories even more for this dish try cooking with less butter or use only one tablespoon blue cheese.
