When I am in the mood for a salad nothing beats a HUGE Greek salad with feta and chicken. Sometimes this can provide just as much comfort as my turkey bacon cheeseburger and oven-baked onion rings. When this is on the weekly menu plan I don’t have to dig into my bag of bribes because my kids are also huge salad fans.
Keep in mind, if you start drowning salads in dressing and cheese they can have more calories than a Big Mac or piece of chocolate cake. This is something I learned early on as I educated myself on portion control and calories. I will never forget when I started calculating calories sitting there shocked looking at my 800 calorie “healthy” salad!
With my Big Skinny Greek Salad you get all the taste and substance without the extra calories.
- 2 cups romaine lettuce
- 1 cup baby spinach
- 2 tablespoons Newman’s Own Olive Oil and Vinegar dressing
- 6 black olives
- 2 mini cucumbers, sliced
- 3 slices red onion separated into rings
- 2 tablespoons feta cheese
- 3 grilled chicken tenderloins marinated in 1 tablespoon of Newman’s Own Olive Oil and Vinegar dressing
- 1 pita, toasted and cut in half
- Place first 7 ingredients in medium to large bowl and mix well. Place onto large plate.
- Place grilled chicken on top and toasted pita to the side.
Special note: You can use any dressing with this recipe. I personally love how Neuman’s Own taste but use whatever you have on hand. Also 150 of the calories comes from the pita. If you want to cut the calories a little more then use half of the pita, eliminate it all together, or find a substitute.
Tips for preparing this dish ahead of time: To have this dish ready to go for a simple weeknight dinner prep all the ingredients and marinade the chicken over the weekend. Depending on when during the week you will be eating this you can either keep the chicken in the refrigerator or freeze it. If you decide to freeze the marinated chicken then take it out and defrost it in the refrigerator the day before it is on the menu. This way the chicken will be ready to hop on the grill when you get home.
