This past week my menu plan did not go as planned and I was left with 4 extra bananas that were getting ripe. Of course that could only mean one thing banana bread or muffins. I chose muffins simply because my kids will eat anything that somewhat resembles a cupcake. As I searched for a good banana muffin recipe I came across this one on allrecipes.com. I did not make it exactly as the recipe stated because I am trying to create baked goods with whole wheat flour and less butter and sugar. It was not my plan to share this recipe the first time around because I was not sure how it would turn out. But I have to say they are quite good so here you go.

Ingredients
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large ripe bananas
1/2 cup sugar
1/2 teaspoon vanilla
1 egg
4 tablespoons of melted butter
1/2 cup chopped walnuts
Directions
Preheat over to 350
Step 1. Combine all dry ingredients together in a bowl and set aside.
Step 2. Mash bananas in another bowl. Then mix in egg, vanilla, sugar, and butter. Blend till smooth.
Step 3. Slowly mix in the dry ingredients. Once all blended fold in the nuts.
Step 4. Put paper liners in muffin pan. Place 1/4 cup of batter into each liner. Bake for around 15 -20 minutes depending on your oven.

These look fantastic. I like how you used whole wheat flour and a fairly low amount of sugar. I’ve got a REALLY PICKY EATER (sigh) and have all the usual cookbooks including Deceptively Delicious, but I feel like there’s too much sugar in some of those recipes. I’m going to print yours out and give it a go – one thing my picky eater loves is muffins

I absolutely love Banana bread and I am going to give your receipe a try. However, I can’t find where you listed the calories and such. Can you please provide me with that information. I have found that I have been buying more WW products at the store except for bread itself. But I do buy the WW pancakes, pasta, and buns and stuff. Your blog inspires me and I will be working on a food journal/blog type as soon as I figure out how to do it on my blog.

I made these but substituted mini chocolate chips for the walnuts and used 4 bananas. They are so moist and delicious!
Hey – I just made these! I was so glad to find a “healthy” recipe, calling for WW flour! I also substituted apple sauce for the melted butter. I’m sure it would be some yummier with the butter, but as we butter muffins when we eat them, this made me feel like it was a better breakfast for the kids. They turned out well – the paper cups stuck to them pretty badly, but that may have been the lack of oil.
