This Basic Grilled Chicken Quesadilla recipe was so easy to make. And with the family loving it this for sure will be a staple at our dinner table. I decided to stay real basic the first time around as I made these quesadillas. In the future, I plan on playing around with it a bit more trying to sneak some additional vegetables in on my kids.
This recipe makes about 5 servings. Serving size is 1 tortilla with 1/2 too 3/4 cup of chicken and 1/2 cup to 3/4 cup peppers and onions, and 1/4 cup cheese.

3 tablespoons olive oil
1 large pepper
1 large onion
1 lb chicken breast cut into bite size chunks
1 packet McCormick taco seasoning
1 1/4 cup taco cheese
Coat saute pan with cooking spray and add 1 tablespoon olive oil. Cook chicken until no longer pink then add seasoning packet. Cook according to directions on packet.
When chicken is done set aside.
Step 2. Wipe out pan. Coat again with cooking spray and add 1 tablespoon of olive oil. Saute peppers and onions till they are cooked but still have a crunch to them. About 5 -6 minutes.
Step 3. Turn indoor grill onto 350. Coat with cooking spray.
Step 4. Fill tortillas with 1/2 cup to 3/4 cup chicken, 1/2 cup to 3/4 cup onion/pepper mixture, and 1/4 cup cheese. Fold over and place on grill. Cook both sides until cheese melts.
Cut in half and serve.
Note: The cheese in this recipe adds a lot of calories. To reduce calories in this dish either reduce or eliminate the cheese.
