Every Sunday I will post our menu plan for the following week. I try to create a set of recipe choices that are family friendly and kid approved. Because I like to try new recipes from different cuisines I am not always successful in pleasing my kid’s picky taste buds though sometimes I am pleasantly surprised. In the future I will list out the daily calories and other nutritional information for those that would like it. The Skinny Mom’s Kitchen menus are to serve as a guideline and inspiration for your meals. Use and change up what you like to meet your own family’s needs.
Enjoy!

Wow, thank you so much for this great meal plan! I really appreciate your participation in my linkup today. I hope you’ll play along next Monday too : )
Sure will! Glad you enjoyed it!
Your menu looks awesome this week. I would really like to see the calories and other nutrition info in your future posts. Here’s my menu for the week. All meals are less than 500 calories. I will try to include more nutrition info next week as well.
Monday: Shepherd’s Pie w/ ground lamb (Prevention), black eyed peas, salad
Tuesday: Indian chicken & vegetable stir-fry (EatingWell), brown rice, sauteed broccoli w/ sesame seeds
Wednesday: Bourbon Chicken, black beans, yellow rice
Thurs – Sun: leftovers or something easy as my husband will be out of town.
Thanks for stopping by! Yes I will definitely work on getting the nutritional info up. Your Indian chicken and veggie stir fry looks awesome! Indian food is one of my favorites.
Here’s another thank you for contributing to my linkup yesterday:

Looking forward to the recipe to come. We love using Chobani in smoothies, especially when they involve peanut butter. Double yum!
